Cheeky Roast Chicken

1 kg kip

12 plakjes bacon

6 kleine worstjes

6 worteltjes

6 aardappels

6 tenen knoflook

1 handje rozemarijn

1 handje salie

olijfolie

Bereiding

In a large bowl, bash and bruise the rosemary and sage and really scrunch in four good lugs of olive oil with your hands.

Rub some of this flavoured oil inside and around the chicken then place it in a large tray in a pre heated oven at 225°C for 30 mins.

I like to cut the potatoes into three and parboil in salted boiling water for 6 mins before draining and adding them to the bowl of flavoured oil, along with the whole carrots, garlic, bacon and sausages.

Mix and toss then add to the roasting tray with the chicken and cook for a further 40 mins.

Once golden and cooked, remove the chicken to a plate to rest for a while (10 mins) before carving.

Serve with some steamed spinach or purple broccoli and gravy; when you make the gravy, you must use all the goodness from the bottom of the tray and any stock from the greens.

Roast chicken is something that I really loved as a kid, even having chicken sandwiches the next day was pukka. This roast is very straightforward because you cook everything together. You can vary it as you like with other veg's like celeriac, parsnips and onions. I loved it when Dad carved the chicken at the end of the table and let us help ourselves, of course Mum kept her eagle eyes on us to make sure we ate our greens, but I felt a little more grown up for it anyway... nothing's changed!
