Aromatic Osso Bucco in White Wine.

860 a 1000 g osso bucco

2 uien in blokjes

1 grote wortel in blokjes

4 tenen knoflook

3 sprietjes tijm

3 sprietjes salie

4 stukjes sinaasappelschil

1/2 kaneelstokje

3 a 4 lepels olijfolie

4 ansjovisfilets

1,5 kopjes gezeefde tomaten

2 glaasjes witte wijn

gehakte peterselie

1 handvol meel met zout en peper



This dish uses veal shin, cut through the bone, look for bones with big juicy marrow. Other alternatives like lamb shanks and good old beef (rund) shin in large steaks are great too.

Bereiding

Dust the osso bucco in the seasoned flour.

Heat a thick bottomed casserole pan, add the oil and brown the meat well on both sides.

Remove the meat and add the carrots, onion and garlic, soften for 4-5 minutes, add the white wine and reduce for 2 minutes until almost dry.

Add the tomatoes, anchovies, thyme, cinnamon, sage and orange peel and bring to a simmer.

Return the meat to the casserole, put on the lid and cook in the oven at 180 °C/350 °F gas mark 5 for 2 hours until deliciously tender and rich.

Sprinkle with parsley, taste for seasoning and tuck in!
