BereidingThis bread can be in the oven in around 40 minutes from weighing out the ingredients.Place the flour, sugar and salt onto a clean surface. Mix together the water, milk and yeast and allow to sit for 10 minutes in a warm place until frothy. Make a well in the centre of the flour and pour in the liquid, work into a dough and kneed for 5 minutes until smooth. Allow it to sit for 5 minutes, then divide into 4 even pieces and roll into balls. Take each ball and flatten out into a long shape, place onto a baking tray dusted with semolina or polenta. They should look rough. Cover with plastic wrap and prove for 40 minutes - they will be fluffy and soft - brush with milk and sprinkle with onion and sesame seeds. Make a few indentations with the tips of your fingers then bake in the oven at 230°C for 20 minutes until crisp and golden.
