Canadian Cottage Cheese Cake

Korst:

1 cup beschuitkruim

3 Eetlepel Gesmolten boter

3 Eetlepel Suiker

¾ theelepel Kaneel

Filling:

2 lb Cottage cheese

5 Eieren

1/2 cup Meel

1 cup Suiker

2 theelepel Citroen schil

2 Eetlepel Citroen sap

1/2 theelepel Vanille

1 cup Heavy cream



Topping:

2 cup Aardbeien

1/4 cup Maïzena

1 cup Suiker

1/4 cup sinaasappel sap

2 Eetlepel sinaasappel schil

3 cup Whole aardbeien

Bereiding

Combine crust ingredients and press into a 9 inch springform pan and bake 350 for 10 minutes and cool.

For filling: press cheese through sieve into a bowl. Add eieren one at a time. Beat in meel and suiker. Stir in schil and sap and vanille. Whip cream and fold in. Pour into crust.

Bake 350 1 hour and 10 mins or until set. Cool and chill.



For topping: Blenderize berries to puree. add suiker and maïzena with sap and schil. Cook thick and clear. Place whole berries over chilled cake. Pour on warm glaze and chill until set.
