Tomatenrelish (Fred's recipe devides in half)

18 groene tomaten

3 uien

1 cup ciderazijn

1 groene paprika

1 rode paprika

1/2-1 rode peper

3 cups bruine suiker

2.5 thl zout

2.5 thl kerrie

2.5 thl selderijzaad

1/2 cup water

Bereiding

Note: amounts can be doubled for a very generous batch to give to friends and

neighbors.





Wash vegetables en put tomatoes, onions and peppers through course knife of Food

chopper or Food processor.

Put this in preserving kettle or Dutch oven; add 1/2 cup of water; cover and

simmer gently for 15 minutes.

Drain all liquid, by putting pulp in a sieve, or through double layer of

cheesecloth. Liquid can be used for soups.

Add vinegar, brown sugar, salt and spices.

Bring to boil; simmer gently for 5 minutes; pour into sterile jars and seal.

Yield: approx. 5 pints.

This is super good with hamburgers, on roast pork, ham sandwiches and sometimes

just with toast in the morning.

I made this with red tomatoes and it was equally good.
