Cheeky Chicken Tikka Masala

4 kipfilets in blokjes

2.5 cm gemberwortel, gehakt

2 gehakte tenen knoflook

1 thl chilipoeder

zout, peper

2 lepels gehakte koriander

sap van 1 limoen

1 gehakt ui

1 gehakte rode chilipeper zonder zaad

300 ml 'double cream'

sap van 1/2 citroen

korianderblad om te garneren

pilavrijst of naan om erbij te serveren

Method

1. Place the chicken in a large bowl and mix with the ginger, garlic, chilli, salt, pepper, coriander, lime juice and one tablespoon of the oil. Set aside for 2 hours.

2. Pre-heat the grill to high. Thread the chicken on to skewers and cook under the grill for 12 minutes or so, turning frequently until well browned.

3. Meanwhile, heat the remaining oil in a large pan and cook the onion and chilli for 5-8 minutes until dark golden. Add the turmeric and cook for 30 seconds. Stir in the cream and cook gently for a couple of minutes.

4. Slide the chicken off the skewers and stir into the creamy sauce. Simmer for 5 minutes or so until the chicken is cooked through. Check the seasoning, adding some lemon juice to taste, and serve with rice or naan. Garnish with the coriander.

The marinade is good, although I added some lemon zest. The weakness of this recipe is in the (cream of onion!) sauce: far too heavy and insipid. This I replaced with a simple stew of the following: 1 large (800 ml) can chopped tomatoes - seeds strained. 1 tsp each ginger & garlic paste, 8 green cardamons, 4 cloves, 1 tsp brown sugar, 1/2 to 1 tsp chilli powder, salt. Combine all and simmer slowly to reduce to 2/3, about 1 hour. Cool slightly and stir in 3-6 tbsp thick cream to taste. Much lighter and zestier, according to my victims.

I was eager to try Ainsley's cheeky chicken tikka masala after seeing him prepare it on TV. Unfortunately, I assumed that, being such a fattening and unhealthy dish, it must be justified via the taste; but it really didn't taste anything special. Now that my curiosity has been satisfied, I doubt I will be making it again.
