Foo yong garnaal Pacific

6 eieren

100 ml kippenbouillon

2 lepels olie

4 sla-uitjes in dunne plakjes

1 gehakte rode peper zonder zaad

75 g shii-take in dunne plakjes

175 g gekookte gepelde garnalen

100 g gehakte ham

75 g taugeh

1 lepel sojasaus

een handje korianderblad

Bereiding

1. Beat together the eggs and stock until well blended.

2. Heat the oil in a large frying-pan and stir-fry the salad onions, chilli and mushrooms over a medium heat until beginning to soften.

3. Add the prawns, pork or ham and beansprouts, cook for 30 seconds, then add the soy sauce and coriander.

4. Pour over the beaten egg mixture and cook gently, stirring, until the egg is just set. Serve immediately.
