1 small yellow Ui, chopped 1 small groene paprika, chopped 2 stalks Selderij, chopped 2 cloves Knoflook, minced 2 lbs gehakte Kip 1 can (10 oz) Rotel Tomatoes with Chiles 1 can (4 oz) in blokjes groene chilipeper 1 Eetlepel Worcestershire Saus 2 theelepel Chilipoeder 1 theelepel gemalen Komijn 1 theelepel Selderij Zout 1/2 theelepel gekneusde Black Peper 1 Eetlepel Menudo Spice mix Sap of 2 Limoenen 2 Eetlepel Kip Bouillonconcentraat 2 Quarts bottled Water 2 cups grated Swiss Cheese 1/2 cup fresh Koriander Leaves Limoen partjes for garnish 1 large bag of Tortilla Strips (ongezouten) |

BereidingIn 2 Eetlepel olijfolie, saute the ui, peper, selderij, and knoflook. Empty into a stock pot.In same frying pan saute the kip. Add to the pot. Add Rotel tomatoes, seasonings, limoen sap, kip base and water. Mix, cover and simmer a minimum of 20 minutes, stirring several times. To serve put a large handful of tortilla strips into each bowl. Add soup; top with the grated cheese. Garnish with the fresh Koriander, Cold Tecate and Limoen partjes. |
