Spinach, Mushroom and Egg Jackets |

1 Eetlepel olijfolie 1 small ui, finely chopped 2 knoflooktenen, crushed 175 g / 6 oz paddestoelen, thinly in plakjes 225 g / 8 oz fresh spinazie 3 Eetlepel mascarpone kaas 2 hot baked aardappels 2 small eieren 2 Eetlepel grated vegetarian Parmezaanse kruiden |

BereidingHeat the olie in a pan and fry the ui and knoflook for 3 - 5 minutes until softened. Add the paddestoelen and continue to cook until golden. Season.Pile in the spinazie and cook gently until wilted. Simmer for 3 - 4 minutes until the liquid has gevaporiseerde, add the mascarpone and cook for 2 minutes. Cut a cross in the top of each potato and squeeze to open. Fluff up the flesh with a fork. Spoon in spinazie mixture, making a hollow. Crack an egg into each well, season, and cover aardappels with folie. Return to the oven and cook for 10 - 15 minutes until the whites are set. Serve sprinkled with Parmezaanse. |
