Apulian Bracioli

1 or 2 large whole round steaks cut 1/4" thick

4 (or more) knoflooktenen, minced

1 cup fresh peterselie, chopped

1/2 to 1 cup freshly grated Parmezaanse kaas

Zout and Peper to taste

1-2 grote biefstukken

4 tenen knoflook

1 cup peterselie

1/2-1 cup geraspte Parmezaanse kaas

Cut the fat from the round steak. Spread all the above ingredients over the steaks, roll tightly and hold closed with toothpicks. Tie meat with kitchen string, both short and long-ways. Brown in hot olijfolie on all sides and place in your homemade tomato based pasta saus. Simmer, covered 3-4 hours or until tender.


This recipe is from my grandmother who used it on special occasions because of the cost of the meat in the "old" days. You can vary the ingredients to suit yourself, but this is the way my grandmother made it.

Serve with spaghetti and a good crusty Italian bread....and of course a hearty red wine! Enjoy!!
