Walnut and Veggie Burgers

---MEALS WITHOUT MEAT, TV FOOD---

2 ts Veg oil, divided

1/2 Red onion, chpd

1 Rib celery, chpd

1 Carrot, chpd

1/2 Red bell pepper, chpd

Garlic, opt

1 c Walnuts, toasted, ground

1/2 c Breadcrumbs

1/2 c Cooked brown rice OR orzo pasta

2 Eggs

Salt and pepper

Buns

Avocado slices

Swiss cheese slices

Red onion slices

Bereiding

Saute onion celery, carrots and red bell pepper in 1t oil until soft. Cover if desired. Garlic may be added if desired. Add nuts, crumbs, and rice.

Form into patties. Fry in 1t oil until golden. Place on bun and assemble.
