Kipfajitas

2 kleine kipfilets in stukjes

1/8 thl paprikapoeder

1/8 thl milde chilipoeder

1/8 thl komijn (eventueel)

1.25 g oregano

15 ml olijfolie

1 teen gekneusde knoflook

1 dungesneden ui

1/2 kleine rode paprika zonder zaad, dungesneden



Voor de tomatensalsa:

10 ml olijfolie

1/4 groene chilipeper in dunne plakjes

1/2 gehakt ui

1/4 groene paprika in blokjes

1 klein teentje knoflook

2.5 ml rode wijnazijn

1 blikje (200 g) gehakte tomaten

zout, peper

10 g peterselie



8 kleine bloemtortilla's

75 g ijsbergsla (gescheurd)

75 g geraspte cheddarkaas

45 ml slagroom

Bereiding

1. Toss the chicken pieces in the paprika, chilli powder, cumin and oregano.

2. Heat 5ml/1tsp of the oil in a pan and sauté the chicken, stirring occasionally for 3-4 minutes. Remove the chicken with a slotted spoon.

3. Add the remaining 15ml/1tbsp of oil and sauté the garlic, onion and red pepper for 5 minutes.

4. Return the chicken to the pan, season to taste and heat through.

5. To make the tomato salsa, heat the oil and fry the chilli, onion, pepper and garlic for about 5 minutes. Add the vinegar and cook for about 20 seconds. Add the chopped tomatoes, salt and pepper and parsley and simmer, uncovered, for about 15 minutes.

6. To assemble, heat the tortillas in the microwave according to the packet instructions. Then place some of the chicken mixture along the centre of each tortilla, top with some tomato salsa, shredded lettuce, grated cheese and a little sour cream and roll up.



Note: Chicken is a good source of lean protein and has the advantage of being very versatile and quick to cook. The darker the meat of the chicken, the more fat it contains, and the skin is very high in fat too.
